A family that grew up among olive trees
We are the Villafranca Bonilla family, and our grove sits on the slopes above Marmolejo, in northern Jaén.
We grew up among these trees and learned what our parents learned: that land is tended with patience, and that good oil is made in the field, not in the factory.
For years this oil stayed at home and in the houses of the family. What has changed is not how we make it, but that now it also leaves here.
When you order a bottle you are talking to us. No middlemen, no buying group, no warehouse where the oil sits for months.
Here we do not pick when it suits us. We pick when it is time.
Rain-fed, high up, surrounded by scrubland
The grove sits in the municipality of Marmolejo, deep in the Sierra Morena, high on the slope.
It is rain-fed: we do not irrigate. The tree works harder and yields less fruit, but that fruit comes more concentrated, and you taste it. A rain-fed oil has more body and more bitterness than one from an irrigated grove.
Rockrose, thyme and caper bush grow all around. It is not a closed monoculture, and the hillside sets the pace of every season: what decides when we pick is how the year has gone, not the calendar.
